Monday Morning’s Moose Sightings

I saw 5 moose on my run this morning!

Within a couple minutes of starting, I spotted a mom and baby bedded down in someone’s front yard. Then half-way through, I saw three more moose literally hanging out on someone’s front porch area. It was crazy! After that, I don’t know how many times I scared myself silly thinking a large rock or bag of trash was a moose!

This morning’s run was a 6 mile out and back route. I went out “easy” and came back “hard” trying to have negative splits on the way back. On runs like these, I wish I had someone with to push me because I start losing focus on what I am doing and my pace starts to slow down. I did my best to keep a good, steady pace the entire time though.

It was a good run. My legs felt fresh after a day off yesterday. I finished in 47 minutes.

Breakfast

I knew exactly what I wanted before I headed out the door this morning. I love hot oats after a cold run!

Homemade Scottish oats + milk + water + flax seed + brown sugar + raisins + sunflower seed butter

I didn’t think I would like sunflower seed butter as much as I do! I’m not sure what it is about it–maybe I just overdosed on peanut butter and almond butter, but my jar of sunflower butter is almost gone. :( I also had a blueberry scone, which I made yesterday. This isn’t necessarily a healthy recipe, but I like to treat myself every once in a while! ;)

These scones are so moist and delicious and literally melt in your mouth.

I did use half whole wheat pastry flour, so that makes them somewhat healthy, right?

Lunch

A piece of leftover Tortilla Bake. (I just realized I never blogged about this recipe–oops.)

I usually don’t mind leftovers. I even ate this piece cold. (I was too hungry to care.)

Plus 1/2 of a Honeycrisp apple, carrot sticks, and 1/4 red pepper. Love crunchy foods!Question

    The oddest animal while running? Well, I’ve been charged by a moose, my dog was charged by a bear, I’ve seen wolves, porcupines, lynx, eagles and a coyote. But those are commonplace in Alaska, eh?
    The oddest thing (don’t laugh!) was being chased by a wild pig in Arizona. Those things are mean.
    Oh, and today a crow tried to steal my hat while I was running along the bay in Seward. It actually tugged it halfway off my head.
