Happy Friday!
Personally this week flew by for me, and I can’t believe it is Friday already. I’ve got a line-up of some things that I am loving these days–everything from my favorite new spring outfit to a podcast to a new recipe that I’ve already made three times within the past two weeks.
WEARING // Madewell V-Neck Pocket Tee + AG Jeans + New Balance shoes
I love a simple yet comfortable outfit that looks like you tried but didn’t try too hard. 😉 This short sleeve shirt is super comfortable, a soft material, and the perfect loose-fit without being frumpy. I’ve worn these jeans more times than I can count. I love the hint of distressing and the fact they aren’t too stretchy. I get a lot of compliments on these New Balance casual shoes. I don’t run in them (Although I tried one time and quickly learned why they are a kick-around shoe.), but they are a staple for weekend-wear and for running errands.
LISTENING // Run This World with Nicole DeBoom – podcast interview with Kara Goucher
Kara Goucher has been my idol for many years, so I always love listening to podcasts she is in. I loved how thoughtful Nicole was in the questions she asked Kara. They discussed everything from hard times in Kara and Adam’s marriage, how her life doesn’t revolve around competitive running as much as it once did, and how she deals with the hard times. I appreciated that Kara never holds anything back. She is brutally honest and open about everything.
READING // Stronger
I actually read the book Stronger during our trip to Hawaii. This book recounted one of the survivor’s experience at the Boston bombings, and while in some ways it was hard to read because I was there that day. It was also incredibly fascinating to hear about this day from the perspective of someone so close to the bombs and read what went through his mind that day and the days to follow.
USING // Rejuvenating Eye Cream
I have never used an eye cream prior to purchasing the Rejuvenating Eye Cream from Beautycounter, but now I know why people religiously apply this each night. No more puffy eyes, less wrinkles, and no bags under my eyes in the morning. This will stay in my skincare routine from now on!
EATING // Coconut Almond Protein Balls
I was on a baking spree one day at home making Superhero Muffins from the Run Fast Eat Slow cookbook, my Peanut Chocolate Protein Bites, but revamped the Peanut Chocolate Protein Bites recipe a bit and came up with these Coconut Almond Protein Balls. It took for a few times to get the recipe right, but now Craig, Cullen, and I gobble these up.
Coconut Almond Protein Balls
Ingredients
8 dates
1 cup old-fashioned oats
1/2 cup almond butter
1/4 cup chocolate protein powder
1/4 cup + 1 tablespoon almond milk
2 tablespoons unsweetened coconut flakes
Directions
1. Process dates in a food processor until they form a paste.
2. Add oats and process again until combined.
3. Pour date-oat mixture into a bowl, and add almond butter, protein powder, and milk. Stir to combine.
4. Roll into bite-sized balls.
