Happy Saturday!
What a whirlwind of a week it was for us. Cullen got his first ear infection Tuesday afternoon, so we spent almost every day of the week inside resting and trying to get better. I finally took him into the doctor on Friday because he still wasn’t getting better. We got some antibiotics, and I think we are already on the mend.
But let’s get started with some things I am loving right now. I’ve got a couple of new outfits to share, yummy snacks, recipes that you are going to love, a new favorite Beautycounter product, and a podcast that you need to check out!
I am loving this skirt and sweater turtleneck combination lately. I didn’t think I was into turtlenecks, but I actually really like this one. The sweater is a thin, merino wool material, and the skirt is also made from wool. Right now the skirt is on sale, and the sweater is less than $35.

If you have not checked out I’ll Have Another with Lindsey Hein podcast, do it now! I love these casual, fun, and informative interviews Lindsey does. I have especially enjoyed her interview with Allie Kieffer and Molly Ludlow.
Three recipes you need to make. The first two recipes are not mine, but I can’t recommend them all enough.
Creamy Thai Sweet Potato Curry – So quick and easy!
Brown Rice with Peas and Cilantro – I served this alongside seared salmon, which was phenomenal.
I also made my Stacked Veggie Enchiladas this week again. They are just too good and make great leftovers.
I got an order from Beautycounter on Monday, and I’ve already tried everything! I am especially loving the Cleansing Balm. I’ve heard so many good things about it and finally purchase my own. I love using it at night to take off all my makeup and it leaves my skin feeling really soft and hydrated! Check out my Facebook group Beautycounter – The Runner’s Plate to see a video of some other new products I recently got. Request to join, and I’ll happily add you.
I am still loving my RX Bars–especially the Chocolate Sea Salt flavor. They are great in a pinch and have very minimal ingredients. (The downside is the sugar content.)
This has easily become my new mom look: a chambray button-up shirt that makes me look more put-together + the most comfortable jeans ever (I am not even exaggerating!) + cozy boots.
I really do prefer to make my own granola, but this week was crazy and other things such as coaching sessions and Cullen being sick took up my time, so I opted to buy this bag of granola at the store today. I love the chunks of granola and the ancient grains in it, plus the flavor is really good.
For Christmas I got two essential oil diffusers, and I have been using them non-stop this past week. To be completely honest, the jury is still out on how effective the oils are, but they do make our bedrooms smell nice.
With Valentine’s Day right around the corner, gift your loved ones some safer skincare items such as this all-natural deodorant, a paraben-free primer, nail polish that is free of 10 harsh chemicals, and some of my favorite Beautycounter products.
I hope you have a wonderful weekend! I’m almost to 60 miles for the week, which makes me pretty happy since it is winter and running that kind of mileage in the winter is a lot harder than in the summer.
