I seem to be good for about 3 miles of running before the cramps set in these days. Starting out this morning on my run, I felt awesome! Everything was clicking away and feeling good for the first 2 – 2.5 miles. I had planned to do a 20 minute tempo run, but 12 minutes into it, I started to get some cramps in my lower abdomen. I ended up walk/running the last 2 miles, which was a bummer. BUT at least I am running more than I had been.
Craig came home for lunch, so I made salmon pizzas for him. He has been using My Fitness Pal to track his food intake, and since using it, he has realized he has a hard time getting enough protein in his diet. We always have an abundance of salmon, and it is a good, lean protein, so that’s what was on the menu today.
I whipped up these salmon pizzas in no time and they tasted really good. The recipe is actually from my mother-in-law, which she made often for Craig and his brother when they were growing up.
Salmon Pizzas
Servings: 4
Ingredients
4 English muffins, split in half
16 oz. cooked salmon
1/3 cup mayo
1/2 onion, diced
1/2 cup Parmesan cheese
1 Tablespoon Tabasco (more or less to taste)
1 teaspoon ground mustard
salt and pepper
Directions
1. Toast English muffins in toaster or under broiler.
2. Combine remaining ingredients in a medium-sized bowl and mix until incorporated.
3. Spread mixture on top of toasted English muffins.
4. Place under broiler until heated through and slightly browned. (Approximately 3-5 minutes.)
After lunch I took Sadie on a walk around the neighborhood. She was huffing and puffing when we got back and proceeded to sprawl out on the cool hardwood floors afterwards.
