I ended up staying home sick yesterday from work and coming home early today. This cold hit me like a Mack truck Wednesday night/Thursday morning. I woke up Thursday morning feeling very weak—as if every cell in my body was working overtime to kill off whatever was attacking my body. I slept for a solid 12 hours and then lounged around for a good part of the day.
Since my Chicken and Biscuits dinner was a flop last night, I had to redeem myself before Craig told me I couldn’t be a stay-at-home wife anymore. (Oh, that was only in my dreams?)
Now this, this is something I impressed myself with. I have to admit, I’m not a huge tuna fan. It is okay but nothing I get excited about. However, this recipe made me excited for tuna, and I couldn’t wait to eat the leftovers at lunch today.
Tuna Salad
(Inspired by this recipe.)
Ingredients
1 (7 oz.) can of tuna
2 Tablespoons mayonnaise
2 Tablespoons Greek yogurt
2 Tablespoons red onion, finely chopped
1 teaspoon olive oil
1 teaspoon mustard
1/2 lemon, juiced
1/2 teaspoon dried parsley
1/4 teaspoon dried dill
dash of sea salt
Directions
1. Add all ingredients to a small bowl and mix until combined.
2. Serve on crackers, toasted sourdough bread, or any carb of your choice.

Not being able to run is killing me. It is painful to read running blogs, look at running clothes, and hear about others running. But this only makes me that much more excited to start running again. AND it will make me appreciate every run I go on. Now I just need to kick this cold to I can see if my glute has finally healed!!
With all this extra time, I am finding a whole slew of things to buy. Oh, how evil online shopping can be! It is just too easy!! I have found the next pair of running shoes I want to buy!
I have become obsessed with the Mizuno Wave Riders. I bought THREE pairs of the 15s and can’t wait to try the 16s!
I love buying shoes from Online Shoes because they have free shipping and free exchanges. Businesses don’t always ship for free to Alaska, so I get when one does. I have also taken advantage of the free exchanges many times!

I can’t believe I forgot to show you what Craig ended up picking out for his birthday gift.
For months now, Craig has been talking about how much he wanted to buy an iMac, but when push came to shove, he chose something much smaller and more portable. . . .the new iPad Mini.
We are never the first people to get the latest and greatest technology. We don’t have iPhones, we don’t have cable, we still have a big-boxed TV (whatever a non-flat screened TV is called), and I have no idea how to text. BUT we now own an iPad Mini.
Craig loves it and can’t take his eyes off of it—or the TV screen.
I’m like that with technology too. The TV ratings people paid us to fill out a survey for them on our tv habits. It was pretty darn empty.
ooh nice! i love technology but don’t have lots of the new stuff… we do have iphones though, and a flat screen tv (but only because it was a wedding gift). that tuna sounds yummy.
The tuna salad looks tasty. I have gotten bored with my turkey on wheat. I am curious about the iPad mini. I’ll be tuning in to see how Craig is still enjoying it over time. 🙂
