Phew! I’m exhausted!! Not only is it the end of the week, but I teach seven classes on Fridays, which always leave me wiped! I’ve also been lacking serious motivation lately. It is too early in the school year for this to be the case!
I got up this morning at 5:45 a.m. to run 5 miles. That was actually sleeping in a little for me, but my body did not want to get out of bed this morning–even despite going to bed around 9:45 p.m.! I thought about not going out, but once I am awake, it is impossible for me to fall back asleep because I am too paranoid I won’t wake up again. So out the door I went.
And for feeling exhausted, my legs actually felt quite good! It was a pretty decent run overall. The roads weren’t too icy or snow-covered, so I was glad about that. 🙂
When I got back, I devoured my bowl of overnight oats I made last night. It is so nice having breakfast already prepared in the morning!
In the mix:
– vanilla yogurt
– Siggi’s plain yogurt
– unsweetened vanilla almond milk
– 1/2 mashed banana
– chia seeds
– ground flax seeds
– sliced frozen strawberries
– unsweetened coconut
– walnuts
I also had a piece of toast with sunflower seed butter and banana slices. I love sunflower seed butter! 🙂
Snack
I had the leftover Siggi’s yogurt from this morning, plus some granola.
Lunch
I made myself a big lettuce salad for lunch. Gotta get those veggies in before the weekend hits and my veggie consumption dwindles!
This dish was filled with: spinach, leaf lettuce, carrots, tomatoes, green onion, cheddar cheese, and a hard boiled egg.
I snagged this red pear at the grocery store when I saw them on sale. As far as I know, I’ve never had a red pear before, so I was excited to try it. Verdict: definitely a let-down. Not nearly as good as I thought it would be. It might be because it was out of season. I’m willing to try one again though.
My afternoon snack was this granola bar.
As I was driving home from work, I suddenly got a strong craving for hot oatmeal. Granted I love breakfast foods, but I usually don’t crave breakfast foods in the evening, but I went with my craving! Plus I had a this almond butter jar that was almond empty, so I made OIAJ (oats in a jar) for dinner.
I love getting things accomplished on Friday nights. This way I don’t have to worry about them the rest of the weekend!
Things accomplished this evening:
– phone call with my mom (With the holidays approaching, I am really starting to miss my family!)
– eyebrows waxed
– Target (I have a huge sweet tooth, and I love a good deal, so do you realize how difficult it was for me to pass up the Halloween candy that was 75% off! I think I walked past it three times before I finally convinced myself it was not a good idea to have that much candy in the house at one time.)
– vacuumed and toilet cleaned

There’s too many kinds that I like, here’s a few that are my favs: Twix, Skittles, and anything gummy.
Snicker candy bars are my favorite.

Chia Cheese Enchiladas
8 ounces shredded cheese (Mexican blend or cheddar)
6 green unions chopped into 1/4 pieces -green and white parts
2 teaspoons ground cumin
8 ounces of cream cheese at room temperature
8 enchilada size tortillas (corn or flour)
1 10 ounce can enchilada sauce
8 tablespoons chia seeds
Directions:
Preheat oven to 400 degrees. Spray a 9X13 inch baking dish with vegetable spray. Reserve about 4 ounces of the shredded cheese for the topping.
In a medium bowl, combine the remaining cheese, onions, cumin, chia seeds. Spread the softening cream cheese equally on the tortilla, top with the onion/chia mixture. Roll the tortillas and place seam side down in the baking dish.
Pour the enchilada sauce over the top of tortillas, sprinkle the remaining cheese over the top of the sauce.
Bake about 15 to 20 minutes until golden brown and bubbly.
