Instead of running this morning, I worked on prepping our dinner for tonight. Be sure to check back later tonight to see what I made! 😉
So far this week, I’ve made dinner every night–or had something prepared ahead of time! (This usually isn’t the case!) And tonight will be another successful homemade meal. Or at least I hope!?!?! I guess I’ll see when I get home! 🙂
Breakfast
Breakfast was nothing spectacular. Usually I know exactly what I want before I even go to bed, but that wasn’t the case today. I opened the cupboards, stared in the fridge, and contemplated what to have.
I finally settled on something quick and easy.
A cinnamon raisin English muffin with peanut butter and banana slices.
I don’t have a picture of the actual English muffin I ate because I loathe taking pictures in my dark kitchen in the mornings. (I had this picture on hand already.)
Lunch
With no time for a mid-morning snack, I broke into lunch early at 11 a.m.
Sandwich: turkey + hummus + mustard + red pepper + lettuce + tomatoes + sprouts
Baked sweet potato chips (I had more than what it looks like, the others are hiding.)
I am pretty picky about my hummus. I’ve had a lot of kinds I don’t care for, but I picked up this for the first time last week, and it is awesome!
I’ve had the salsa from Emerald Valley before, which I loved, so I thought I would give the hummus a try. I’m glad I did! I also had a small piece of pizza leftover from last night and an apple.
How many nights a week do you cook/prepare a meal?
I usually only end up cooking about 3 nights per week.
i usually cook about 5 nights a week.
I cook 6 nights a week, but I vary how intensive the meals are. The 7th night is either out or leftovers.
I usually cook 6 nights a week, but I really want to try eating out a little bit more (even tho it’s so much more convenient to eat at home).
