Wahoo!! I actually had time to relax last night. After getting up at 5 a.m. on both Saturday and Sunday morning, I got everything done on my to-do list and it felt so good!
Run
This morning’s 6 mile run included a 30 minute tempo run where I picked up the pace to get some leg turn-over in. It was a good run, and I felt good! I was tired though when my alarm went off; I was not ready to get out of bed! But within a few minutes I had pretty much forgotten about being tired.
Breakfast
After stretching and a shower, it was time to grab some grub. (Ugh! Indoor lighting.)
Cottage cheese + Homemade Granola + applesauce
I like having cottage cheese after running because of the protein and added sodium. I added the granola for carbs and crunch!
I also had a piece of bread smothered in rhubarb jam. I made this loaf of bread over the weekend, and it was not your traditional loaf of bread.
Quick Honey-oat Bread
This loaf of bread was made with yogurt, egg, and no yeast! Crazy, right? I was a little worried as to how it would turn out, but my fears quickly vanished as soon as I took a bite!
The recipe was quick and simple (no rising necessary)–and incredibly delicious! The smooth, dense texture reminded me of a quick-bread, yet it still had the classic bread taste. Definitely a winner!

Lunch
Mixed greens + pear + grapes + feta + toasted pecans
For the toasted pecans I simply added a small amount of sugar (probably 1/4 – 1/2 t.) and some chopped pecans to a non-stick skillet and turned the heat on to low-medium. I slowly melted the sugar and made sure to stir occasionally. Totally made the salad.
I liked the marionberry flavor, but the lemon chiffon is still my favorite!
And a sweet, tart, and crunchy Pink Lady apple. As much as I like Honeycrisp apples, the slight tartness of the Pink Lady gets me every time.

I’m so intrigued by that bread. I would make it right now but it would be a waste of freshly baked bread since I’m sick and can’t taste anything!
