I had a productive afternoon at school getting ready for the first day of school tomorrow!! Yikes!!
My afternoon snack was my favorite kind of pear–D’Anjou. I like that they are slightly crunchy because I heart crunchy foods!!
After work, I “sprinted” home and got busy prepping dinner.
When I saw Jenna’s post on Cheesy Zucchini Pizza a while back, I knew I had to try it!! It made my mouth water when seeing the pictures, and tonight was the night I finally was able to make it.
Craig and I were not disappointed!! This recipe was a winner!!–easy, only 5 ingredients, and incredibly good!!
I had two pieces of this cheesy pizza for dinner.
Zucchini Pizza
Ingredients:
- pizza dough (I made KG’s Homemade Pizza Dough on Sunday.)
- 2 cups shredded zucchini
- 2 cups shredded mozzarella cheese
- 1 cup ricotta cheese
- 2 garlic cloves, minced
- salt and pepper

I have the most prolific zucchini plant! I harvest several flowers and zucchini daily. Thank you for this ah-mazing recipe! I will try it tonight and use Trader Joes’ whole wheat pizza dough. Thanks!
