In high Minnesota fashion, I must first talk about the weather. 😉
Today was at least an improvement from yesterday. It was partly cloudy, so the sun had a chance to shine every once and a while. Maybe this trend will continue tomorrow. Let’s hope so!
For lunch, a pita pizza with carrot sticks and roasted yellow squash and zuchinni.
Looks an awful lot like Monday’s lunch, huh? However, this time I did not add tomato or spinach–just ooey, gooey cheese with dried basil and oregano sprinkled on top.
And for dessert, a Skinny Cow vanilla and caramel cone. Boy, are these addicting!! Good thing they are only 150 calories a piece.
This evening I stopped at the library to check out a couple of new books because I was just not getting into Secrets of Eden. (This seems to be a problem with me.) Please do not think it is a poorly written book or something you should not read just because I didn’t like it!!
I hope I enjoy these more.
I am excited about this book and have high hopes. I read Dean Karnazes’ Ultramarathon Man: Confessions of an All-Night Runner and really enjoyed it. It was amazing what he does for/on his training runs–examples: running a marathon to the start of a marathon or ordering pizza in the middle of the night on a run!! I hope this book follows suit.
Well, my dinner/supper was a big flop, and I was too embarrased to take a picture. I attempted to create a spinach salad with a bunch of toppings, but it was not good–quite awful actually. Oh well, live and learn.
