I love the freshness of food in the summer–juicy fruits and crisp vegetables just picked from the garden–so flavorful and delightful!!
Last night we had my favorite summtime meal–BLTs and sweet corn!!
Actually I had a BCLT–that’s Bacon, Cheese, Lettuce, and Tomato sandwich. (Sometimes we make ABCLTs, which translates as an Avocado, Bacon, Cheese, Lettuce, Tomato sandwich but no avocado in the house tonight.)
I love this combination–fresh, light, and so tasty!! (I almost consumed it all before taking a picture. 😉 )
Afterwards, something a little sweet to satisfy my sweet tooth. Not quite a “natural” food product, but everyone can indulge once in a while. These ice cream cones hit the spot with their smooth caramel and crunchy cone, they were perfect for a summer evening.

Today’s workouts:
– ran 4 miles
– lifted weights (upper and lower body, back, abs) for 40 minutes
Before hitting the gym, I made this light and refreshing salad.
Ingredients:
– leaf lettuce
– tomatoes
– red pepper
– kalamata olives
– feta cheese
– and some carrots on the side
And just a little drizzle of some Annie’s Balsamic Vinaigrette–a great compliment to the flavors in this salad!
After pumping some iron at the gym, I knew I need some protein, so I tried this protein bar for the first time. I thought it was pretty decent. It was a little on the chewy side, but the middle nugout had a nice chocolate flavor and the outside was coated in a crunchy granola-like texture.
I am in the process of making No-Knead Bread right now and will have a post about it tomorrow. This bread only has four ingredients and tastes like it came from a bakery!!
