Terrific Tuesday

Today was my aunt, Sue’s, last day in Alaska, so we took once last opportunity to take a hike.

We headed to the Glen Alps Trailhead (which I’ve never heard anyone refer to this area as) in the Chugach State Park.

We chose to do some hiking along Powerline Pass.

We had a lot of fun talking and hanging out. We even saw a wolverine while hiking. This was the first time I saw a wolverine, so that was exciting!

Afterwards we went to Starbucks.

I ordered a chai latte and had some trail mix I brought from home.

Trail mix: walnuts + pistachios + raisins + dried cranberries

Before I knew it, it was time to meet Craig at Bear’s Tooth for dinner.

My aunt wanted to take us out-to-eat for hosting her while she was here. We happily obliged!

I ordered the Yogurt and Dill Salad with blackened tofu on top.

I had this salad the last time I came and absolutely loved it and have been fantasizing about it since, but the salad I had tonight was nothing like I remembered. It was a shame, but it was still good nonetheless.

Before heading home, we couldn’t let Sue leave without experiencing a trip to Yogurtland at the airport.

In and out in 30 minutes or less so we don’t have to pay for parking. We have it down to a science!

Distance: 10 miles (5 miles tempo run)

Time: 1:22

(8:20 minutes/mile on the way out; 8:00 minutes/mile on the way back)

I felt good, and I was glad to get the miles in! :)

Yogurtland Love

After nearly 36 hours, my eyes are still dilated!!

The eye doctor said it would take longer for the dilation to go down since I have blue eyes, but he also said it would only be a couple of hours! Seriously this is not cool!

The most annoying part is how my near-sighted vision has been compromised. I literally couldn’t do anything yesterday afternoon that involved me having to focus on anything close-up (i.e. working on the computer, reading, looking at a recipe, etc.) (Now I know how you feel Mom and Dad!)

So I had to resort to watching The Bachelorette on Hulu. . . . I know, I lead a tough life.

Craig and I just had to make one last trip to Yogurtland tonight before I leave for Minnesota on Friday!

It was a glorious ride!

When we got to the airport, (If you are a new reader, yes, our Yogurtland is at the airport!) we had to find a spot where TSA wouldn’t confiscate our bikes!

I’m pretty sure we are the only people who show up to the airport in biking gear.

I spotted this bear on the escalator ride to Yogurtland.

I’m pretty sure Anchorage is the only airport that has stuffed wildlife just hanging out for the travelers to see. (Oh, our mall also has a stuffed moose and grizzly bear!)

I love how every time we go to Yogurtland, there are always new flavors of fro-yo to choose from!

The soreness from my marathon is starting to go away. I had a massage on Monday, which I think helped quite a bit.

However, my latest marathon-related injury is that I discovered I have a blister under the bed of my big toe nail!! This might be TMI, but I did pop it by sticking a pin under the toe nail. Ick! I know, but I had to do it!

What a horrible blogger I am!!

I missed the one-year anniversary of my blog (a.k.a. my blogiversary)!! So sad. . . .oh well, life goes on.

Memorial Day Weekend = start of summer

Last night Craig and I enjoyed a little homemade pizza action.

I like my variety, so I basically created 3 different pizzas on my one piece of dough. I also had some roasted broccoli on the side.

Any time I make homemade pizza dough, I always make it the night before and put in the fridge until we are ready to use it. I’ve done this because it seems like all the best pizza dough recipes require you do to this.

Well, I was lazy Friday night and didn’t feel like making it, so I held off until we were ready to actually eat pizza on Saturday.

When I started making the dough Saturday evening, I was a little worried the dough wouldn’t turn out that well since it wouldn’t be refrigerated overnight. However, through this little accident, I discovered how to the a paper thin, crispy crust!!

I was so excited because any other time I make pizza dough, the crust gets very thick and chewy (which I also do like). But sometimes I want a thin, crunchy crust.

Plus, the dough was much easier to work with and stayed in the shape I wanted it to.

My only guess as to why the crust was paper thin was because the yeast didn’t have time to start working?!?!

I thoroughly enjoyed every last piece!

After pizza, we headed to our new favorite dessert place: Yogurtland. We are definitely addicted! ;)

I filled my cup with red velvet, coconut, and cheesecake frozen yogurt and topped it with chocolate-based treats.

I am not going to waste my money on heavy fruit. I’d rather get a 1/4 cup of Oreo crumbs instead of 1 strawberry!!

This time we made it in and out in 17 minutes, thereby avoiding to pay for parking at the airport. We are getting good!

Then it was off to the movie theater to see Bridesmaids.

The movie was extremely funny!! It was definitely a little raunchy at times and I’m not a fan of cussing (which there is a lot of), but other than that the acting was superb, the script was well written, and it was a great little movie.

I have heard it is the female equivalent of Hangover I/II. I thought it might be more of a chick flick, but Craig enjoyed it as well.

I am laying low today because my knees are sore and muscles are very tight—especially my thutt (thigh + butt) muscles—from my run yesterday!
