Whirlwind Week

Phew! What a week it has been.

Here’s what I’ve been up to the past week:

traveling 15 hours by plane from Alaska to North Carolina –> driving nearly 24 hours from North Carolina to Minnesota –> getting a big surprise from my parents and husband –> driving north across the state of Minnesota to Duluth, MN –> running a marathon

So, let’s start at the beginning. . .

Friday, June 8

Kristy (my sister) and I left Anchorage, Alaska and spent 15 hours traveling to Raleigh, North Carolina.

We left at 11 p.m. (which is when this picture was taken), had a layover in Denver, then flew to Chicago where we had another hour layover before we finally arrived in Raleigh at about 5 p.m. on Saturday. (I do like red-eye flights because I can never sleep.)

Kristy spent the past year living in North Carolina for her dietetics internship. She came up to Alaska to finish her internship, and then we were going to fly back to North Carolina to move her home to Minnesota.

When we finally arrived in Raleigh Saturday early evening, we made sure to enjoy every minute of the sunshine and warm weather.

We went shopping, running, and tried a new restaurant called Irregardless Café, which was amazing!!

I had a Garden Tofu Scramble, which was made with tofu and nutritional yeast and literally looked like scrambled eggs. It was very delicious, and I love how vegan food can taste so good!

I would highly recommend this restaurant if you are in the area!

DSC_0015

We also walked to the farmer’s market and bought some delicious strawberries and peaches. Oh, they were so good!

One afternoon we attempted to go swimming but got rained out.

DSC_0034

After 3 shorts days in Raleigh, it was time to depart. . . . .we had to get back to Minnesota for a wedding (for my sister to attend) and a marathon to run (me!).

On Tuesday, June 12, we left Raleigh at 4 p.m. and drove north to begin our trek to Minnesota.

DSC_0040

I packed up Kristy’s little Honda Civic to the brim. I declared myself the world’s greatest packer for fitting everything in. There was a lot of stuff in there!

DSC_0043

We were sad to leave North Carolina! We would have liked to spend more time there.

DSC_0045

That evening we drove until 10 p.m., crossing into Virginia and then into West Virginia where we stayed for the night.

DSC_0059

DSC_0070

It was a very pretty drive along the way.

DSC_0062

DSC_0052

DSC_0054

We went through mountains and tunnels.

DSC_0063DSC_0067

And then it was time to call it a night. We ended up staying in a very sleazy and scary motel. (I’m blaming it on my sister because she was being too cheap.)

DSC_0098

Don’t let this seemingly okay picture deceive you.

DSC_0094

The vanity was made out of cheap plywood that was painted a dingy off-white color.

DSC_0075

The bathroom door had holes in it.

DSC_0080

It was also falling apart.

DSC_0090

The dresser had holes in it.

DSC_0086

And what really grossed me out was this wet/oily stain on the sheets. I refused to sleep in this bed!

DSC_0088

There was a whole bunch of other problems with the room, so were kind of freaking out about the whole ordeal. (It was half funny, half scary, but we did get a good laugh out of the whole thing.)

I love this picture with Kristy in the background.

DSC_0092

We were so paranoid that Kristy decided to set up a booby trap, which really wasn’t a booby trap but more like a make-shift alarm.

She ended up setting the garbage can on top of the chair so that if someone opened the door, we would hear the garbage can fall and then the intruder would have trouble pushing the door open with the chair if front (not!), which would give us a few extra seconds to “escape.”

DSC_0096

I think we both slept with one eye open that night and left as soon as possible the next morning.

We stayed in Charleston, WV and saw the capital the next morning as the sun was rising.

DSC_0101

We needed to fit a run in that morning, so we drove to some random (safe-looking) neighborhood and went for a lovely 3 mile run before we were on our way again.

DSC_0116

Then we crossed into Indiana,

DSC_0111

then Illinois,

DSC_0114

and then into Iowa.

DSC_0123

We stopped at Boondocks USA (in Iowa somewhere) to fill up on gas, which was quite the place!

DSC_0125

Finally, we reached Minnesota!

DSC_0133

We got home around 11 p.m. that night, and I was exhausted after 18 hours in the car!

I promptly went to bed, but then about an hour later, when I was fast asleep, my sister, mom, and dad came knocking on my door with a surprise!

Craig had flown from Anchorage to surprise me for the marathon!! I couldn’t believe it and thought I was dreaming since I had been sleeping. I was SO excited and happy to see him. It was actually my parents idea and they flew him out to MN for the weekend. What an awesome surprise!!

Red Wing, MN

DSC_0330

Today my mom and I went on a road trip!

I told my mom we should do a girls-day-out while I was home! I let her pick what she wanted to do. She said she had never spent time in Red Wing, MN, so we took a little road trip to see the sights there today.

We started out by walking around downtown, going into the shops, and just perusing.

DSC_0304

Of course we had to make a stop at the Uffda Shop! (I am 25% Norwegian.)

DSC_0303

Some of the t-shirts cracked me up.

Red Wing is known for their Red Wing Shoes and work boots.

DSC_0288

In the store downtown, there was a small historical museum that showcased how the boots are put together and how they have changed over time.

There was even a pair of work boots made specifically for Alaskans working in the harsh conditions of the oil fields.

Where can the largest boot be found? Why in Red Wing, MN, of course!!

After a couple hours of “shopping” (we didn’t actually buy anything), it was time to get some food.

I spotted a cafe while driving around and thought it would be a good place to eat because

a.) there was outdoor seating, and I have to take as many opportunities to eat outside now because I never do in Alaska, and

b.) there were a lot of people eating there. Always a good sign!

DSC_0305

A walk up to the cafe’s outdoor seating on the rooftop at The Veranda!

DSC_0314

We had beautiful views from the rooftop!

My lunch date.

DSC_0312

I enjoyed a very delicious salad!

Bib Salad

Marcona almonds, aged goat cheese, port poached cherries, pickled red onions, celery seed vinaigrette

It was very light, flavorful, and completely hit the spot!

DSC_0315

We had to eat pretty quickly because we wanted to catch the 1:00 p.m. Rusty’s River Rides boat tour down the Mississippi on the Sigh-Sea-Er II!

DSC_0329

The boat tour lasted 90 minutes and was very informative! We saw several sight along the way including bald eagles.

DSC_0320

Once again, beautiful views on a picture-perfect summer day!

Summer days in Minnesota are the best! That’s why people endure the long, hard winters.

DSC_0327

What a fun and informative boat ride!

DSC_0328

Naturally it was time for ice cream afterwards at the Red Wing Confectionery!

DSC_0337

My mom had the blueberry waffle cone flavor! She said it was really good!

DSC_0332

I had the coconut joy flavor, which was amazing! One of my favorite flavors in a long time!

coconut ice cream with chocolate coconut and roasted almonds

I love hand-dipped ice cream!

DSC_0334

After a little more browsing, we drove through Lake City, MN and Wabasha, MN, which were also super cute towns along the Mississippi River.

Both my mom and I had a great day! I love exploring new places!
