Heat Wave

We’re having a heatwave. . . a tropical heatwave. :D

It was a balmy 35 degrees this morning during my run!!! I couldn’t believe it, and I was definitely loving it! I felt SO good–no stiff, tight muscles; no bitter cold air in my lungs; and no red skin!! :) Wonderful, absolutely wonderful!

The only downside is that I know it won’t last long, and we are bound to get at least 2-3 more cold snaps before spring comes in about. . . oh . . . May!!

I felt the extra spring in my step this morning during my 8-mile run because of the milder temperatures. However, it was SUPER slippery in some areas!! I definitely almost wiped out but managed to stay on my feet the whole time! I finished my run in 1:06.

Today it was back to the grind of teaching, but thankfully the kids were pretty good. They all commented about my “new” hair. While most liked the darker color, a few said they preferred me blonde. Kids can be so cute sometimes.

Craig had the day off, so he was in charge of making dinner.

He has a handful of dishes he makes that I love, and Kale Tacos happen to be one of them!

Tonight starts the one and only TV show I watch: The Bachelor! I seriously cannot sit down and watch TV, but when it is The Bachelor(ette), I will have my gluteus parked on the couch in no time.

As much of a fan I am, I somehow missed the season Brad was on!! Oh well, I’m excited for this season nonetheless.

Kale Tacos

Good Evening!

I’m so glad I got a ton of stuff done over the weekend; I actually feel like I have a chance to relax (and blog) in the evenings. :)

My afternoon snack: Siggi’s Pomegranate & Passion Fruit Yogurt. I really liked this flavor! It was a good one.

My husband really is the chef in our house. I need a recipe, but he says he “creates.”

His creation tonight: Kale Tacos!

He actually came up with this creation while in college. So while most guys were stuff their faces with pizza, burgers, and Top Ramen, my future husband was getting regular. (If you know what I mean!) ;)

Craig started by mixing these seasonings (to your taste’s preference) in a small bowl: cumin, garlic powder, chili powder, and salt.

He then chopped onion, tomatoes, and sauted them to a saucepan with extra virgin olive oil.

The show-stopper, a giant bundle of kale.

Now chop, chop, chop that bad boy!!

Next he added the kale to the pan that contained the onions and tomatoes.Place the cover on the pot and allow kale to steam.

Steam mixture until it looks like this. Nothing but veggies, I like it!

Add seasoning mixture to the kale and stir.

Part one is now complete.

Part two: Start by placing corn tortilla on a non-stick skillet sprayed with olive oil.

Spray tortilla with more olive oil and sprinkle with: basil, garlic powder, and crushed red pepper.

Sprinkle shredded mozzarella cheese on top and allow to melt.

Remove from heat. . .

and top with kale mixture.

Craig likes to top his with additional cheese. :)

Fold like a taco, eat, and enjoy!

I like it when my husband cooks for me. :D

These are SO good! I can’t believe kale can taste this good! Granted it is quite fibrous, and a little tough to bite through, the combination of the seasonings, cheese, and corn tortilla make this creation super delicious!

I needed a little ice cream to cool my mouth from the heat of it. :)

Just a few things on my to-do list tonight:

  • Do an ab workout.
  • Wash my car.
  • Pack my lunch for tomorrow.
  • Clean the kitchen and wash dishes.
