My Next Marathon

Some of you have been asking when my next marathon is. Well, since it is official, I can now give an update. And I’m happy to report my next marathon is not Boston. (I’m glad I don’t have to wait that long!)

Instead, I will be running the Twin Cities Marathon on October 7th!! :D

Eeek!! I am SO excited that I:

1.) get to run a marathon again so soon! (Yes, I said “get.”)

2.) get to run a marathon with my sister! (I have been wanting to do this for several years now.)

3.) get to go back to Minnesota again so soon!! (double eek!!)

Craig and I will both be flying to Minnesota for an entire week, and I couldn’t be more excited!! Originally, we planned to go to Minnesota to see our favorite country music artist, Josh Turner, perform in Red Wing, MN. But when I found out the Twin Cities Marathon will be happening that following weekend, I couldn’t not run it!!

I have already started to train—hence the reason for starting to bump up my mileage already. I’m am very glad—and fortunate—to have the summer off to focus on training and run my little heart out. :)

This morning was a short 4 mile run but also very slow!

Distance: 4 miles

Time: 35 minutes

Average pace: 8:41 minutes/mile

I wore my new “spider women” Nike capris. I think these are supposed to act like compression/support areas for your IT band, knee, and calf areas. I mostly got them because they looked fun.

Plus, I couldn’t pass on the amazing good deal. Originally $100 and now $19.99! Thank you Nike Outlet at Medford Outlet Center (Medford, MN).

After my run, I had another bowl of Egg White Oatmeal. I really like how this tastes—plus it has a decent amount of protein.

There really is oatmeal under all those strawberries.

You must make these cookies!! They are incredibly good and VEGAN. . . .but you honestly wouldn’t know it. (And FYI: just because they are vegan doesn’t mean they are healthy though!)

Banana Everything Cookies

I followed the recipe exactly except omitted the chocolate chips because I didn’t have any.

I sent all the cookies to work with Craig (except the ones I ate last night), and within about an hour of him getting to work, he was calling me up to ask for the recipe since so many people were asking for it!! I think that’s a good sign.

Give Me My Gun

I was particularly excited to run this morning because I have been feeling very good since the marathon and am excited to get back to higher mileage again! Plus, I have all the time in the world now that it is summer and school is out!

Distance: 8 miles

Time: 64 minutes

Course: paved trails, neighborhood roads, no hills

I am starting to ramp the mileage back up. I ran 37 miles last week and plan to run 46 this week. I realize this exceeds the 10% rule but recovering from a marathon is a little different. I wrote this post about how much mileage to do after running a marathon. I am not quite following the 25%, 50%, 75% mileage rule this time around since I have been feeling good. I’m going to do the best to listen to my body and hopefully it goes well. :)

I rarely eat anything before running in the mornings; I feel much better running on an empty stomach. (I can usually run up to about 10 miles on an empty stomach.)

But on those days I don’t eat anything before I run, I come back pretty hungry. This morning, I was craving hot oatmeal.

This is a little different than the regular oatmeal I make because I cut back on the amount of oats and added egg whites. It changes the texture to something that resembles more of scrambled eggs—which may sound weird—but I really like it.

Egg White Oatmeal

Serves: 1

Time: 5 minutes

Ingredients

1/2 banana, mashed

1/4 cup almond milk

2 egg whites (6 T. liquid egg whites)

2 Tablespoons ground flax

2 Tablespoons old-fashioned oats

1/4 teaspoon vanilla extract

1/4 teaspoon cinnamon

Directions

1. Combine all ingredients in a small pot on the stove-top.

2. Bring to a boil, reduce heat, and simmer until creamy.

I topped my oatmeal with a fresh peach (oh, they are so good right now!) and peanut butter. Yum!

I forgot to share our shooting experience that we went on about a month ago while my sister was visiting us.

I have to admit, this was the first time I had ever fired (or held) a gun before!

(I’m sure my form is awful!)

This was really how I felt about it: a little scared and apprehensive.

Kristy, my sister, seemed to be having a good time.

We went back into some abandoned mine north of Anchorage. We set up old canned vegetables for targets along with zombie deer targets.

Craig really is obsessed with zombies. . . .check out his key chain: I {heart} zombies.

Craig was really excited I actually came out and shot a gun.

He was a very good teacher. . . . .and I’m sure he didn’t mind putting his arms around me. ;)

Kristy had done this before, so she was a pro. (Okay, not really, I think she’d only gone one other time.)

Here’s the real pro.

There is no doubt Alaskans like their guns. I’ve decided Alaskans motto is: “Give me my gun, my land, and leave me alone.”

I may not know how to shoot a gun, but I’m a pretty good fire-starter . . . . .except the part about using a lighter. (You know you’ve never been a smoker when. . . .)
