Soup Fanatic

Did you realize we had soup 3 nights this week? Plus I think I had it for two lunches as well?!?!?

Monday night: Feta Shrimp Skillet (That was really more like a soup than a skillet.)

Tuesday night: Butternut Squash Soup

Thursday night: Crock Pot Chicken Tortilla Soup

I guess this cool fall/winter weather is causing me to crave warm and comforting food!

Dinner

This meal literally took me less than 10 minutes to prepare. I was starving when I got home!

I had the last of my fake chicken burgers, which are pretty decent!

I topped my burger with lettuce, tomato slices, and salsa. A great combination consumed in 0.2 seconds!

After a quick dinner, it was time to get a much needed haircut!

This was the first time I went to Stylized in Anchorage. It was a located in a small intimate home that was tucked away in a neighborhood. I got great service from Scott, the owner. He was very friendly, accommodating, and really listened to what I wanted! I got a simple trim, but I would feel very confident in his skills if I wanted to do something more drastic!

- My husband loveslovesloves pizza and loveslovesloves curry, which is why I really want to make Emily’s Indian Pizza Recipes!

- Buckwheat Granola by Kath

- And a gazillion other things!

Sigh! Just not enough free time to bake/cook as much as I want. Can summer come soon?

Squashing My Intimidation

Happy Wednesday!

This morning I only ran 3 miles because I’m going to the track after work to do a speed workout. :)

Breakfast

Before leaving for my run this morning, I assembled overnight 60-minute oats in this almost-empty, large jar of almond butter.

oats + homemade Scottish oats + chia seeds + ground flax + vanilla extract + agave nectar + sliced banana

It doesn’t look like there’s much in there, but it was a bulk-size jar from Costco!

I made this apple crisp last night right before going to bed, so I had to snag a few bites this morning to make sure it was okay. ;)

This definitely isn’t the best apple crisp I’ve made, but it was a quick and simple recipe and still tasted good!

Snack

Ten o’clock rolled around and I was hungry again!

When it comes to eating, I have pretty good self-control. For instance, I can eat chips straight out of the bag without eating more than about one serving. However, trail mix is something that I have to portion out, otherwise I go overboard!

cashews + peanuts + Craisins + raisins

Lunch

Butternut Squash Soup + a piece of bread for dipping + carrot sticks + Chobani

Not only was this soup good, it wasn’t as difficult as I thought it would be! I was scared to buy a whole squash at the store, but after taking it step-by-step, it was not nearly as intimidating!

All I did was literally cut the squash up, bake the pieces in the oven, cut the rind off, and puree all the ingredients together in the blender. Yes, it does take some time, but totally worth it!

I love all the protein in Greek yogurt, but I am getting burnt out on Chobani. I think I need to take a break from it for a while.

On a side note, I am SO happy it has not snowed yet! Two years ago it had snowed by the beginning of October. I don’t remember when the first snowfall was last year, but the snow can hold off as long as it wants! That would be A-okay with me. :)

Question

What is something you are intimidated to prepare?

Cooking a whole turkey or chicken still scares me! But I’ve heard it’s not that bad.

Butternut Squash Soup

Ahhhh. . . I slept much better last night. I love a good, deep, dreamy sleep. :)

Last night I was in bed by 9:00 p.m. and my lamp was off at 9:20! I think that might be a record for me. When 5 a.m. rolled around, it wasn’t too much of a struggle to get out of bed.

This morning I did a quick 4 mile run (33:00 minutes) because I had a staff meeting to be at by 8:00 a.m., which meant leaving home at 7:15 a.m. (Yuck! That’s early for me.)

Here’s a recap of Monday’s run because I realized I forgot to post about it last night.

Monday’s run:

25 minute warm-up

25 minute tempo run (app. 7:30 – 7:45 minutes/mile pace)

4 minute cool-down

Total: 7 miles, 54 minutes

Overall it was a really good run, especially at the beginning. Maybe it was the caffeine from the black iced tea I had before leaving?? I’ll have to experiment and see if that’s the case.

After work today, Craig and I headed straight to the gym for our weekly weight lifting session.

Here’s a list of the lifts I did:

- squats

- bench press

- lat pull-downs

- leg abduction

- leg adduction

- bicep curls

- back extensions

- abs

I generally do 10 – 12 repetitions of each and two sets.

Dinner

I was hungry when I got home, so I immediately heated up the Butternut Squash Soup (based off this recipe) I made over the weekend. It was nice to be able to have something already prepared!

As far as I can remember, I’ve only had squash soup once before, so I was quite sure what to expect. Rest assured this soup was awesome! It was creamy, full of flavor, and I loved the addition of the curry in it! :) Where does the time go? I can’t believe it is time for bed again!!
