8:00 a.m. Breakfast – Steel cut oats + Mixed Berry and Beet Smoothie
I didn’t follow the smoothie recipe to the ‘T,’ but it was still very good. I forget how earthy beets taste, but the sweetness of the fruit helps.
I made steel cut oat in the crockpot, which was SUPER easy. I literally combined 1 part steel cut oats with 4 parts liquids.
1 cup steel cut oats
1/2 cup half and half
1/2 cup milk
3 cups water
I turned my crockpot on high, and after 2 hours, they were ready. The first time I did make them early in the morning because someone thought it was acceptable to get up at 4:30 a.m. But usually I make a large batch ahead of time and reheat them at breakfast time.
11:00 a.m. Snack – English muffin with avocado and nutritional yeast
I’ve been having this snack a lot lately. It is delicious!
12:30 p.m. Lunch – Six Ingredient Sausage Potato Pie
I made this last night for dinner and reheated it for lunch today. Definitely a recipe I would make again. Craig loved it as well, which is always a win in my book!
I ended up not eating the carrots or the hummus. The hummus had gone bad (Boo! I hate wasting food.), and the carrots needed to be soaked in water because they were not crunchy. Instead I had some whole grain crackers with Laughing Cow Cheese and half of an orange.
3:00 p.m. Snack – Peanut butter trail mix
This is kind of a weird snack with the peanut butter mixed into my homemade trail mix (Cheerios, raisins, dried cranberries, and walnuts), but I actually have this snack frequently.
6:00 p.m. Track workout at The Dome
I did a total of 4.5 miles with an interval workout of 4 x 800 meters with 400 meter recovery jog. My 800s were each right at 3:30.
8:00 p.m. Dinner – Sun Dried Tomato and Mushroom Pasta
I wasn’t hungry after my track workout (I never am.), but I knew I needed to refuel with something. Another new recipe, and another for the win.
I have to try that Sausage Potato Pie — with Pork Sausage, of course!!
