Move over Green Monster smoothies. . . . .this Green Balance Juice is where it is at these days.
I liked Green Monster smoothies, but I absolutely love this Green Balance Juice!!
Kale + lemon + ginger + dates. . . . might sound disgusting, but I promise it tastes amazing.
I discovered this beverage when I went to San Francisco for a girls weekend. My friend Anna and I ate at the mall food court, which sounds disgusting, but this was a high-end food court complete with vegan options and this kale drink. I ordered the drink hoping it would taste good, but I was blown away by how these simple ingredients could be so good together. When I got home, I was excited to recreate this drink in my own kitchen, and I’m happy to report the recipe is definitely a replicate of what I had from the restaurant.
Craig and I have literally been drinking one of these beverages every day for the past week and a half, and I don’t see us growing tired of them any time soon.
Green Balance Juice
Ingredients
1 cup orange juice
2-3 stalks of kale leaves
3 dried dates
1 piece of crystallized ginger
squeeze of fresh lemon
3 ice cubes
Directions
1. Combine all ingredients in blender and blend on high until smooth.
The size of crystallized ginger I used.
I often add in plain protein powder since I have a hard time finding other protein sources for my diet. Craig likes to add cucumber slices. Whatever your variation, this beverage is amazing and a very easy way to get a serving of veggies in for the day—and kale nonetheless which is a powerhouse food!

I’m so excited to go try this! It sounds amazing! I discovered crystallized ginger on that trip (although its probably healthier in a smoothie than a cocktail) and am obsessed!
