1. I may or may not have eaten one (or two!) of these (Almost) Vegan Chocolate Chip Cookies as part of my breakfast in the morning this week!

They are good post-run fuel, right?

2. Sadly, I am still dealing with the incident at school that has the administration involved, so my stress level continues to run high.

(This is my “GRRRR!!!” face.)

3. “Termination dust” (a.k.a. snow on the mountain tops) made its debut this week. :(

4. I made my first bowl of pumpkin oats and a batch of Banana Pumpkin Muffins this week! I can’t deny the fact anymore that fall is truly here seeing that half the leaves are already on the ground.

Pumpkin Oats

Ingredients

1/4 cup old-fashioned oats

1/4 cup vanilla-flavored almond milk

1/4 cup water

1/2 banana, sliced

1 teaspoon ground flax seed

1 teaspoon chia seeds

2 Tablespoons pumpkin

1/4 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

dash of allspice, cloves, and nutmeg

dash of salt

Directions

1. Combine oats, milk, water, banana, flax, and chia seeds in a small saucepan over medium-high heat.

2. Bring to a boil, and then reduce heat and simmer for 3-5 minutes; stirring occasionally.

3. Stir in pumpkin, vanilla, and spices.

4. Top with peanut butter, coconut, and raisins.

Stretching for Runners

Stretching: you know you should do it, but you never have the time.

Plus, does it really help or improve your performance anyhow?

Honestly, I love stretching. It feels good and it is easy! It does not require a lot of thought or effort—it is very passive. So why is it so hard to incorporate into our regular routine?

Usually after a run, I am too preoccupied with what I have to accomplish next: getting ready for the day, eating, and getting out of my sweaty clothes—or figuring out how to get warm (depending upon the season), which causes stretching to take a back burner.

But frankly, it is all about making the time—which is actually my philosophy for anything in life. (It isn’t that you don’t have the time, it is about making the time. If it is important enough, you will find the time to do it!)

So let’s make the time to stretch! (Myself included!)

Here are ways I fit stretching into my busy lifestyle.

If you know me, I am always busy doing something and love to multi-task. So even though time of an essence, I am usually pretty good about fitting in a good stretch here and there.

* I will stretch just about anytime I am standing around: in line at the grocery store, while waiting for the crosswalk signal to change (especially while out on a run), waiting for the printer to finish printing a document, etc.

* While out on a walk, I will stop to use the curb for a good calf stretch.

* Another great way I incorporate stretching into my daily routine is to stretch during commercial breaks on TV. I will often use this time to do an ab workout or push-ups as well.

(I know it takes a little extra motivation to get off the couch during those commercial breaks, but remind yourself it is only for 3-4 minutes before your show comes back on.)

* Attend a yoga class. I love how loose and flexible my muscles feel after a good, deep stretch of yoga poses.

Well, I honestly don’t know; there are critiques on both sides. But what I do know is that stretching feels good, and I feel better when my muscles aren’t so tight and stiff, so I’ll keep doing it!!

(Almost) Vegan Chocolate Chip Cookies

Today at school we had a multicultural potluck. [I heart potlucks!]

When I first found out about the theme, I racked my brain for something I could bring. I was having a really difficult time thinking of an item to bring, until I remembered a discussion we had in my multicultural class. (I am currently taking Multicultural Studies for Alaska’s Teachers one night a week in order to renew my Alaska teaching license.)

Last week, we discussed what “culture” means. According to one excerpt we read, our culture is something we choose to belong to (unlike our race which is purely biological and therefore unchangeable). Our culture is fluid and can be defined by a religious group we chose to belong to, where we chose to live (urban vs. rural), our beliefs, or values that we hold.

Well, I decided to embrace my “value” of healthy-living and make some vegan chocolate chip cookies. (I realize this may be a stretch, but I was desperate!)

(Almost) Vegan Chocolate Chip Cookies

Inspired by Taste of Home Healthy Cooking, June/July 2011

Ingredients

1-1/4 cups dark brown sugar

1/2 cup canola oil

6 Tablespoons vanilla flavored almond milk

1/2 cup white sugar

1/4 cup mashed banana (approximately 1 banana)

2 teaspoons vanilla extract

2-1/4 cups all-purpose flour

1 teaspoon baking soda

3/4 teaspoon sea salt

1 cup chocolate chips

1/2 cup walnuts, chopped


Directions

1. Combine the first six ingredients in a large bowl. Beat until well-blended.

2. Combine the flour, baking soda, salt in a separate bowl. Whisk until combined.

3. Add the dry ingredients to the wet ingredients and mix to incorporate.

4. Fold in the chocolate chips and walnuts.

5. Refrigerate the dough for 1 hour.

6. Preheat oven to 375*.

7. Drop by tablespoons onto parchment paper-lined baking sheet.

8. Bake cookies for 9-11 minutes or until edges are brown.

9. Cook on wire rack.

*Note: These are almost vegan because I did not use vegan chocolate chips.

The cookies were super moist and very flavorful! You could taste the banana in the cookie, but it was not overpowering.

Even though Craig isn’t a big sweets person, he downed about 5 of them, so they must be good! ;)
