No Sunday blues for me today!!
Normally I take Sundays completely off from exercising, but since I haven’t been running that much lately (only 14 miles last week), I felt like I had the energy to do some biking today!
I biked for 45 minutes through the neighborhoods this morning by myself—enjoying the silence while the rest of the world slept! π
When I got home, hot oats and iced coffee it was.
Blueberry and banana oats with peanut butter on top.
I added cinnamon and a little bit of honey, which took this bowl over the top! Yum!
Iced decaf coffee to compliment the hot oats. If I have overnight (cold) oats, it is vice versa, then I want hot coffee.
Then I consumed the most tasteless piece of fruit I’ve ever had.
I got this Asian pear at Fred Meyer, and I don’t know if this is just how Asian pears taste or the quality was just bad, but this was a big waste of $1.50. π
The texture was half-way between a pear and an apple, so there was some crunch to it, but it was very bland tasting.
After breakfast, Craig and I biked to church, which ended up adding another 60 minutes of biking for the day for me!
It was great!
– We were being green.
– I got to spend time with my husband.
– I got to be outside—even if it was sprinkling a little.
– Plus, I love exercising.
On our way home from church, we stopped at the grocery store to pick up a few things for our BBQ tonight.
The young adults group at our church hosted a BBQ this evening.
Ha! Ha! Look at my husband surveying the options, trying to figure out what he wants to eat.
Our grill master was busy making veggie burgers, moose burgers, and brats (from my parent’s farm).
I brought a Wild Rice Salad.
It turned out to be quite delicious. My parents sent me this wild rice from Minnesota. Wild rice is huge in northern Minnesota.
I also made Chickpea Herbed Veggie Burgers. These were a hit—even among the meat-loving men!
Thanks to Ashley for the awesome recipe!
Craig + me
We had a very enjoyable Sunday, and I am so excited I don’t have to go to work tomorrow! Yipee!! π
LOVE those burgers. That’s a recipe I make time + time again. π Looks like a great day! The rice looks delicious!

I have been to the Black Hills before! I’ve never been biking there, but I do know how beautiful it is!
Sounds like you had a great weekend. I spent the weekend with Sharon. By the way the top you have on above looks very similar to one I have Yikes?
Take care,
