Things I’ve Learned About Myself

I was puddle jumping during my run in the rain this morning.

It has been raining a lot lately. I honestly don’t mind; I will take rain over snow any day!!

Since my half-marathon 1.5 weeks ago, I have been dealing with some pain in my right hamstring, but I am happy to report that my run this morning was pain-free! :)

I knew I just needed to give it some rest. Now hopefully this continues!

Distance: 3 miles

Time: 26 minutes

Weather: cool, rainy, 50*

I was a short, quick run, but I still got my endorphin-high fix for the day. :)

Breakfast

I tried a new breakfast item today: Kath’s Dough Boy Smoothie.

I actually made one last week, just never posted about it.

Basically you make overnight oats in the blender the night before but wait until the morning to blend everything together.

My Dough Boy Smoothie contained:

- milk

- 1/2 banana

- frozen blueberries

- old-fashioned oats

- Nancy’s Keifer ~ blackberry flavor

- strawberry Greek yogurt

- cinnamon (I accidentally dumped about 2 tablespoons in, so I had to scoop a bunch out!)

(I switched the settings on my camera to RAW quality but wasn’t able to upload them to iPhoto unless I made them smaller, which resulted in the poor picture above. Does any know if I can (how to) upload RAW images to iPhoto?)

I am amazed at the new things I learn about myself each day.

One would think they know themselves through and through by the age of 28, but I seriously learn new things about myself each day!

Things I have recently learned about myself:

  • I would rather work for myself than others.
  • I like to change things up.
  • I am not a procrastinator (on most things)!
  • I would rather do something myself than have someone do it for me because I usually have a particular way of doing it.

Things I have always known about myself:

  • I do not like confrontation
  • I am very indecisive.
  • I like a schedule, but I don’t like doing the same thing every day.

Half-Marathon Recovery

Running hasn’t been going so well for me lately.

Ever since the half-marathon last Sunday (almost 1.5 weeks ago now), my right hamstring, in particular, has been giving me some trouble.

I haven’t been able to run much at all:

Monday: 0 (WAY too sore)

Tuesday: 0 (still very sore)

Wednesday: 1 mile (my hamstrings were screaming at me, so I stopped)

Thursday: 0

Friday: 2 miles

Saturday: 0 miles

Sunday: 0 miles

Monday: 3 miles (I should have only done 2, but wanted to be able to write 3 down. :-? )

Tuesday: 0 miles

I want to try again tomorrow morning, but I am worried my hamstring is going to flare up again.

Usually it does not take my body this long to recover, so I am a little concerned. I have been trying to stretch it and “stick it” (use The Stick on it), but it doesn’t feel like it is something I could massage out. I think I just need some rest.

Since I haven’t been able to run, my primary mode of exercise has been biking.

I have been enjoying all the biking I have been doing and the chance to take a break from running though. However, it is a little strange not to be running as much. (I went running on Monday and felt like I hadn’t gone in a month; just the movement of running felt strange!)

Instead of running this morning, I hopped on my bike for a 40 minute ride. I actually biked with Craig this morning. :) (He is not an early morning exerciser, but I convinced him to bike to a meeting instead of driving!)

I had a bowl of Mom’s Best Naturals Oats and Honey Blend cereal [with milk added after the picture was taken] along with a banana that I slathered with almond butter after I took the picture.

Dinner

Finally, a new recipe!

It has been far too long since I’ve featured a recipe on my blog.

After making the Cheesy Zucchini Pizza last week, I had some leftover ricotta cheese to use up, so I search the internet for a recipe to use it in.

I eventually found a recipe from The Pioneer Woman that I thought would be a winner. [Side note: Did you know The Pioneer Woman now has her own show on the Food Network?]

Tonight’s meal: Vegetable Cheese Medley

This dish came together in about one hour from start to finish, but it always takes me longer to make a recipe than what it says it should take, so if you are speedy, I think it would come together more quickly. [Plus I was taking pictures and being a food blogger.]

To make this dish, start by chopping and assembling all the vegetables required: broccoli, zucchini, peas, and green onion.

Then heat a large skillet on the stovetop and melt the olive oil and butter.

Next get the pasta a-cookin’. Don’t overcook it because it will continue to cook when you bake the dish in the oven.

Saute the vegetables in the oil and butter—adding the garlic first; followed by the broccoli; and then the zucchini, peas, and onions.

Combine the ricotta cheese, egg, salt, and pepper together in a bowl.

Finally, assemble everything together in a baking dish.

Vegetable Cheese Medley

[Inspired by The Pioneer Woman's Springy Shells recipe.]

Yield: 3 servings

Time: 60 minutes (40 minutes prep, 20 minutes baking)

Ingredients

1.5 cups mini fusilli, uncooked (any short pasta will do)

1 Tablespoon olive oil

1 Tablespoon butter

1 large garlic clove

2 cups broccoli, chopped

1 small zucchini, diced

1/2 cup frozen peas

1 green onion, chopped

1/2 cup low-fat ricotta cheese

1 egg

1/4 teaspoon salt

ground black pepper

3/4 cup Parmesan cheese

Directions

1. Cook pasta according to package directions until al dante.

2. Heat oil and butter in pan. Add garlic and saute until golden brown.

3. Add broccoli. Sprinkle with salt. Saute for 2 minutes.

4. Then add zucchini, peas, and onions and saute for an additional two minutes. Set aside.

5. Combine ricotta cheese, egg, salt, and pepper together in a bowl. Whisk until combined.

6. Spray a 6 inch x 9 inch x 2 inch baking dish with non-stick cooking spray and assemble the layers—starting with the bottom—as follows:

- half of the pasta

- half of the ricotta mixture

- 1/3 of the Parmesan cheese

- half of the vegetables

- remaining pasta

- remaining ricotta mixture

- 1/3 of the Parmesan

- remaining vegetables

- rest of Parmesan

7. Bake for 20-25 minutes at 350 degrees.

I loved all the vegetables in this dish! I like to cut back on the pasta and cheese so there are more vegetables than other calorie-dense foods in dishes like this.

Craig was also very pleased with the dish. He gave it two thumbs up!!

How long does it take you to recover after a race?

Alaska State Fair

I have always loved going to the fair. . . . county fairs, state fairs. . . .they were a highlight of my summer growing up!

Surprisingly. I had never been to the Alaska Sate Fair until Sunday when Craig and I (along with others from our church) went there.

It took quite a while to drive to the fairgrounds because there were tons of people there!

Thankfully, it turned out to be an absolutely gorgeous day: sunny and warm! (I didn’t have to wear a jacket. . . . most of the day.)

We had a beautiful view of the mountains! (Kind of weird since I’ve never seen mountains while at a fair before.)

A big reason fairs will always hold a special place in my heart was because I was a really big into 4-H.

I would take approximately 20 projects to the fair including: photography, wood working, food, clothing (sewing), and posters/informational boards on various topics.

I would literally spend all my time during the month of June working on these projects to get them ready for the fair.

I also showed pigs at the fair, so we had to stop by and see the animals.

It is kind of funny because there were so few animals. . . .maybe 5 pens of pigs, 3 dairy cows, a dozen sheep, and that’s about all. Oh, and some chickens and rabbits.

Obviously Alaska is not a farming state, but there were a few John Deere tractors. (This was a 520, not a 620—sorry Dad and Grandpa!)

The largest pig weighing in at 750 pounds. . . .doesn’t even come close to Minnesota’s largest pig at 1000+ pounds.

It is quite well-known that Alaskans aren’t too fond of Texas. (I sincerely apologize to all my Texas readers; I am not in this boat!)

I know for many people, the highlight of fairs are the rides and the food, but for me, growing up, we NEVER rode rides at the fair nor bought food!

Call it a crime, but I didn’t feel deprived. . . . .the rides and food are SO expensive and the food isn’t something my stomach would appreciate anyhow.

Instead we would spend all of our time picking up the free stuff and tailgating for lunch! :)

The one thing my family would get at the fair was a milkshake, so I thought it was only right I continue the tradition.

Craig, on the other hand, had his fair share of fair food including this pork chop on a stick and cheese curds. (I snagged a couple bites of his food. ;) )

After 4 hours, we had seen everything, so we went home so this grandma could go to bed!
