I Made the News

This morning (as with almost every morning) got started with a run!

I know I haven’t recapped every run I have done this week, so here’s what I’ve been up to:

Monday - 7 miles (5 mile Freedom Run + 2 miles afterward)

Tuesday - 4 miles (Ran with my sister. I felt a little tired, but I didn’t sleep well the night before so I’ll blame it on that.)

Wednesday - 8 miles (My breathing problems started to flare up a bit.)

Thursday – 4 miles

I took it easy today. I didn’t feel up to par, but I think my body is still trying to recover from the marathon, so I might lay low tomorrow in hopes of doing a long(er) run on Saturday—possibly 11-12 miles.

After returning from my run this morning, I enjoyed a delicious bowl of Corn Chex with milk and half of a bagel with peanut butter!

I made the Waseca County News!

The sports section featured an article about the Freedom Run on July 4th, and they mentioned my name because I traveled from Anchorage, Alaska to Waseca, Minnesota to run the race!

For the first time since arriving in Minnesota, I had absolutely no plans for the day: I didn’t have any friends to meet up with, no pre-planned family events, instead a day of complete freedom!

So I took some pictures of the kittens romping around on my parent’s farm.

I also spent part of the day doing some serious catch-up on blog reading. This was good because I hate feeling behind.

Here are some posts/reads I really enjoyed and so might you!

- Did you know that if you have a rewards credit card (such as 3% cash back), the business that you make any charge to has to pay that 3% cash!! Here is a small business owner who just alerted me to this fee!

- I want to try making these: Vegan White Bean Butterscotch Blondies.

- Check our a a new favorite blog of mine: Cait’s Plate.

- I love Crate & Barrel but it can be pricey, but today I found out about CB2 with more moderately priced items. It is like Crate and Barrel meets IKEA!

Family & Friends

I have had many opportunities to spend time with family and friends during these past couple of weeks in Minnesota, and it has been AWESOME!!

I’ve tried to see as many people as I could because it has to last me a long time until I am able to see them again! :(

One day for lunch, my grandparents took me, my mom, and my dad out get something to eat. It was my choice where we went, so I chose Jonnie Beans because I enjoyed our experience the previous time we went.

Their beverage menu features fair-trade coffee, espresso, smoothies, and wine.

The cafe also serves breakfast all day and a variety of lunch entrees.

My grandparents are so cute!

My grandpa will be 91 years old in August. . . . and both of them still exercise several times a week! :)

For my entree, I ordered the vegetarian panini sandwich, which was the same thing my sister got last time.

My mom ordered a half chicken salad sandwich with a cup of soup.

And my dad got the special: roast beef panini.

I did not hear anyone complain about their food, so I’ll take that as a good sign! ;)

One evening, I also met up with a couple friends I met while working at Camp Omega.

Carol recommended the restaurant Olives in Mankato, so Charity and I drove over to Mankato and met her there for dinner one evening.

I loved the atmosphere and decor: super cute, modern, and elegant.

The best appetizer I’ve had in quite some time:

I ordered:

French Brie and Mixed Green Salad

Crispy Lavash Bread Cranberry Vinaigrette Dressing

Don’t worry, it was bigger than it looks like in the picture. I ordered the “small” and it was a perfect amount. (I wasn’t super hungry.)

Sushi was the special of the night, which is what Carol and Charity ordered.

They said it was good!

After dinner we hung out, talked, reminisced, and caught up on each other’s lives.

It was so refreshing to have meaningful conversations with people with the same values and mindset!

I am off to enjoy the 80* day and sunshine in my tank top and shorts because pretty soon it will be back to pants and sweatshirts all too soon. :(
