Summer Solstice

Today marks the longest day of the year.

In Alaska, that equals A LOT of daylight!!

Sunrise: 4:21 a.m.

Sunset: 11:42 p.m.

Take note of how high the sun is still at 9:00 p.m.

Breakfast

Good, healthy food does not have to take a lot of time or be complicated!

If anything, most of my meals (especially breakfasts) do not take a lot of time to make!

Today’s breakfast:

Step 1: Using a fork, mash 1/4 avocado in a small bowl or on a plate.

Step 2: Add a squeeze of lime juice (or lemon, but I prefer lime juice) to the mashed avocado.

Step 3: Add a dash of salt and pepper and mix to incorporate.

Step 4: Spread on top of toasted bagel, English muffin, or bread

I love this for breakfast. I have been making this for several years now, and that’s saying a lot because I rarely make the same thing again and again.

I officially dislike the eye doctor as much as the dentist.

Up until today, I have never had my eyes dilated before.

Seriously?!?! That was not cool! And neither were the sunglasses.

Yes, I had to wear the free, goofy sunglasses they give you at the eye doctor because I left mine at home.

It wasn’t sunny when I left, so I figured I wouldn’t need them today.
