Weekend Wrap-up

My 6-day weekend has finally come to an end. If you missed any of my posts, here’s a couple of recaps.

“White” Friday

A couple highlights from the past two days:

Run

Even though it was a holiday weekend, that didn’t deter me from getting a long run in on Saturday morning.

Distance: 11 miles

Time: 1:40

Weather: cold and cloudy, 20 degrees

My body does do well in cold weather!! Somehow I managed to run 11 miles on Saturday, but it was sure slow going!! My body and muscles get so stiff and tight during the winter when it is so cold. I probably ran at about a 9:00 minutes/mile pace, which is about one minute slower than my normal pace during the warmer months. Needless to say, it wasn’t that great of a run.

While on my run, naturally I was planning what I wanted to eat for my second breakfast of the day. The usual did not sound appetizing: cereal, yogurt, eggs, but then I thought about pancakes and couldn’t get them off my mind. So when I got back, I whipped up some pancakes–vegan pancakes to be exact!!

Vegan Pancakes

(Based off this recipe.)

Ingredients

1/2 cup all-purpose flour

1/2 cup whole wheat pastry flour

1 tablespoon sugar

2 tablespoons baking powder

1/8 teaspoon salt

1 cup soymilk

1 tablespoon canola oil

Directions

1. Combine all the dry ingredients in a bowl.

2. Combine the wet ingredients in a separate bowl, and then add to the dry ingredients.

3. Heat non-stick skillet on stove top and spoon batter into pan.

4. Flip and cook on the other side.

I topped mine with pumpkin, pecans, coconut, and pure maple syrup. My mouth in watering just thinking about it again!

Saturday night we had a get-together to go to, so naturally I made a dessert! ;)

I decided that I was going to make Angela‘s Peppermint Walnut Crunch Blondies.

I’m always a little worried when I make a new recipe, but have no fear! :)

These were ah-mazing!! I couldn’t believe how delicious they were!!! And they were vegan to boot!!

The rest of my weekend was filled with running errands, cleaning, and laundry–all that fun stuff. Actually, I enjoy doing those things, so it doesn’t bother me. I like to have all my ducks in a row before going into the week.

“White” Friday

It was more like a “white” Friday than “Black Friday” today!

I have to admit it was very pretty outside–especially with the sun shining!

Here’s how my day went:

6:00 a.m. Get up, go to the bathroom, but decide it is too early to get up–even though I am not that tired– so I crawled back into my nice warm bed and snuggled with my husband.

7:00 a.m. Wake up again and decide to actually get up–plus my stomach was grumbling.

Eat breakfast: a bowl of Quaker Oatmeal Squares with soymilk + 1/2 apple

My sister calls and tells me that Gap is having 50% off everything in the store before 10 a.m., so I decide to give Black Friday shopping a chance.

(I’ve never gone before!! Actually, I take that back, one year my dad and I looked at cars, while the rest of my family fought the crowds of people. They said they would never do that again! Funny thing is, no one in my family has gone out on Black Friday since (that was 7 years ago) and somehow all three of us kids (separately) decided to give it a chance this year!)

7:30 a.m. Decide to go shopping and hit a couple of stores before 10 a.m.

Drive to Target and score some decent deals.

My parents called while I was shopping to tell me they were in Miami headed to Belize–those lucky ducks!!

8:45 a.m. Leave Target and see that the sun finally decided to get up.

Next I headed to the mall and went directly to Gap to take advantage of the wicked awesome deals!

10:00 a.m. Get back home, unpack, and straighten up the house.

10:30 a.m. Head out for a nice 5-mile run in the winter wonderland.

11:15 a.m. Return home and decide I should probably brush the snow off my car.

I don’t know for sure how much snow we got but that looks like about 8-9 inches to me.

11:45 a.m. Ate lunch: lots of leftovers.

I spent the next couple hours:

- stretching

- making my Christmas wish list

- doing some laundry

- starting my Christmas letter

- looking for Christmas photo cards to send

2:30 p.m. Shower and get ready.

3:30 p.m. I headed out again to do some more shopping/errands. (Yes again, but today’s pretty much the only day I have to get things done; we have plans the next couple of days.)

I grabbed an iced Americano at Starbucks.

I then hit up Sports Authority, REI, and tried to sell some clothes at a consignment store, but they were closed.

5:30 p.m. Return home and make dinner. More leftovers.Now I’ve got some candles lit, the music is on, hot tea in my mug, and I’m going to spend the rest of the evening relaxing. :)

Giving Thanks

Another day of giving thanks . . .

Well, maybe not for the snow–in my opinion. However, I did get a nice hour-long run in this morning, which felt awesome!
