I wanted to make pancakes for us this morning, but there was a slight problem: we didn’t have any eggs in the house!
Have no fear, chia is here!!
Chia seeds come to the rescue! I made an egg substitute with chia seeds! How wicked awesome is that?
For the equivalent of one egg, combine:
- 1 tablespoon chia seeds
- 3 tablespoons water
Allow to sit for 15 minutes while the chia seeds work their magic.
Chia Seed Greek Yogurt Pancakes
Yield: 6 medium-sized pancakes
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1-1/2 teaspoons sugar
1/2 cup milk
1/4 cup plain Greek yogurt
1 teaspoon canola oil
1-1/2 teaspoons chia seeds
1-1/2 tablespoons water
1. Combine chia seeds and water in small bowl and allow to sit for 15 minutes.
2. Combine all dry ingredients in bowl. Add wet ingredients, including chia mixture, and mix just until combined.
3. Spoon batter onto non-stick griddle. Flip when batter bubbles.
On my run this morning, I decided to take my headlamp with me in hopes I wouldn’t be so anxious about the uneven terrain and moose.
While it was nice to have a little extra light, I’m am not entirely sold on taking this guy with me all the time. It didn’t provide as much light as I thought it would. The street lamps and lights from the homes lit my path more than my headlamp, but then again there were areas I ran through where it was nice to have a little extra light.
I did an easy 4 mile run in preparation for my long run tomorrow morning.
After work, I used part of my gift certificate to Meg Allen Salon & Spa to get my eyebrows waxed.
This was through the Half-Price Club where I paid $25 and got $50 worth! (I got two $25 gift certificates.)
The gal could tell right away that I use a tweezer–oops. I guess my brows were uneven!
She did a nice job though. I love how fresh and clean I feel now!
Time to get some rest before my long run tomorrow. Although it isn’t going to be a super-long run because I’ve got my half-marathon next weekend.
