I follow quite a few blogs, but one of my favorites is by my running idol: Kara Goucher!

Yes, that’s right, Kara Goucher has her own blog! I was so excited when I discovered this. Check it out here.
I’ve admired Kara for quite some time and the more I learn about her, the more fascinated I become. Maybe it’s because we seem to have quite a bit in common:
- We both grew up in Minnesota.
- We both love running. (duh!)
- She organizes her closet similar to the way I do.
- Neither of us can relax unless everything in the house is in its place. (Which I just found out in her last post.)
- Her demeanor seems similar to mine.
- Plus I am envious she gets to live outside of Portland, OR.
This summer I even had the opportunity to even see her in person. People, I was freaking out!! I was too nervous to have my picture taken with her though. Maybe next time.

Alright, moving on to my not-so-interesting life.
This afternoon at running club (An after-school club is for the elementary students at the school I teach at.), I was really hoping my arch wouldn’t give me any problems, and I’m happy to report that I had an awesome run in the sunshine and no pain in my arch! I am still going to only do a few miles tomorrow, but I am hopeful it is finally all better!
As soon as I got home, I started preparing dinner. I was thisclose to making something simple (read: PB&J or cereal), but I decide that even though I’m the only person to cook for, that doesn’t mean I have to eat something boring.
I did cheat by heating up one of these burgers under the broiler.
I’m always a little skeptical of pre-made burgers (whether they are real meat or not.) However, I was pleasantly surprised at how appetizing this one tasted. And for a fake chicken burger, this guy actually had a similar chicken texture to it.
I broiled the burger on each side for approximately 4-5 minutes, and then during the last couple minutes, stuck a whole wheat tortilla in the oven to toast it.
In addition to the burger, I added lettuce, tomatoes, cheese, and salsa to the burger and made a delicious wrap!
I also steamed some broccoli for added veggies.
Tonight I’ve been busy making breakfast, lunch, and dinner for tomorrow! I’ve got a busy day ahead, so I need to make sure I have all my meals ready to go.
