Homemade Graham Crackers

I wish I had more time to bake during the week, but it just isn’t possible. I’ve made it my goal though to set aside one night during the week for baking, and last night happened to be that night! :)

I love crunchy foods and sweet foods, therefore I love graham crackers! :) However, as my palate has developed higher expectations, traditional graham crackers just don’t cut it anymore. Then I saw a recipe for homemade graham crackers, and it was absolutely necessary I make these as soon as possible!

Homemade Graham Crackers

(Based of this recipe (trial #4) from Ashley.)

Ingredients

1 cup whole wheat pastry flour

1/2 cup + 3 tablespoons all-purpose flour

3 tablespoons granulated sugar

1/2 teaspoon baking soda

1-1/2 teaspoons cinnamon

1/4 teaspoon salt

3 tablespoons canola oil

1 tablespoon applesauce

2 tablespoons molasses

2 tablespoons pure maple syrup

1 teaspoon vanilla

1/4 cup milk

Directions

1. Whisk both flours, sugar, baking soda, cinnamon, and salt together in a bowl.

2. Make a well in the middle of the dry mixture and add canola oil, applesauce, molasses, pure maple syrup, and vanilla. Stir to combine until a crumbly mixture forms.

3. Add milk and knead with hands until a ball forms.

4. Secure a piece of parchment paper to the cupboard and dust with flour. Roll ball of dough out until 1/8 inch thick.

5. Cut uneven edges off (with a pizza cutter) into a rectangle. Then cut into smaller pieces to resemble the shape of graham crackers; pierce with a fork. Scrap dough can be rolled out again.

6. Bake in 350 degree oven for 16 minutes.

7. Cool and break into pieces.

My, oh my, were these babies DEE-licious! I had to stop myself from eating them all! ;)

They honestly tasted like a ginger cookie with the addition of molasses.

Most of them were moderately crunchy, but I rolled out some of them thinner and those babies got really crunchy (like regular graham crackers) and they were divine! Next time I will have to be sure to roll all of them out thinner!!

Dinner

Dinner the past two nights has been exactly the same: a mixture of comfort food and healthy food.

Comfort food for the cool, fall weather outside.

Grilled cheese + tomato soup.

This tomato soup is by far the best tomato soup I’ve ever had! You must try this STAT!

Mmmmm. . . nothing like a ooey, gooey grilled cheese sandwich!

We are well into week number six of school, but I still feel like I’m barely holding my head above the water. I really need this weekend to get caught up–and worked ahead–on errands and projects:

- printing photos

- washing my car

- making homemade bread

- cleaning

- meals planned out for the week.

With being gone last weekend, I did not plan a single meal for us to eat this week! Good thing Craig was kind enough to go to the grocery store to stock our fridge with the essentials to get us through the week!

I really want to have all these little projects done before Monday, so I can actually relax and destress after work next week!

Running

Overall, my running has been going okay this week. Nothing spectacular though.

I am still sore from Sunday!! So I’ve been taking it easy and not doing any speed workouts or anything intense.

I will hopefully be putting in about 30 miles this week.

Kenai River Marathon Relay

I really enjoy racing, but the racing season ends up being pretty short here in Alaska. Most races happen between June – August with a couple sprinkled in during the months of September and October. It bums me out, but I try to run as many races as possible.

This past weekend, three other friends and I drove down to Kenai, Alaska (about a 3 hour drive from Anchorage) to run the Kenai River Marathon Relay.

We headed out Saturday afternoon.

Forgetting to use the bathroom before we left, a pit stop was necessary. I don’t know how many other state’s isolation would require them to stop at an outhouse rather than at a rest stop with flushing toilets. (Another “only in Alaska” moment.)

Fall is in full swing here.

Which means the temperature is also dropping. It was 32* here yesterday morning and 27* this morning! Much too cold for September.

The picture-perfect blue skies were very welcomed though.

As soon as we got to Kenai, we headed to pick up our bibs and enjoy a spaghetti dinner.

The best item in our goodie bag: Clif Shot Bloks! We were all excited about these. :)

I am always a little leary of eating food that I don’t prepare myself the night before a run, but I was starving, so I grabbed a plate of food. I only ate about 2/3 of the pasta and the non-buttered part of the bread. The dessert was awesome though! I think it was a dried cranberry lemon bar of some sort.

The lettuce salad was pretty pathetic looking, but I figured this was better than no vegetables.

After grabbing some food to eat, we drove the course to orientate ourselves with where we would be running.

We finally got checked into our hotel and quickly crashed to get some shut-eye before our race.

We didn’t have to get up super early, seeing the race didn’t start until 9:00 a.m. When we were arrived the start was bustling with people though.

Our first runner, Kristin, ran 5.7 miles. She filled in for us last minute and what a trooper she was!!

Lindsey ran the third leg–a hilly 6.5 miles.

Sadly this was the only shot I got of Lindsey, but she smashed her goal time. She wanted to run around 10:00 minutes per mile but ended up running close to 9:15 minutes per mile!

I ran the 4th and final leg–7.3 miles.

I ran this same leg last year, so it was nice to know where I was going this time. (Not that I got lost last year, but psychologically it helps to know where I am going.)

I maintained a pretty consistent 7:00 minutes/mile pace. I felt good but I could also tell it had been a while since I last raced. (And I am still feeling the effects two days later!)

Dont’ worry, I wasn’t in that much pain. I’m just a really serious competitor.

I picked these up from the free grub table after the race for some sodium. They were pretty good–the salt always helps. ;) I ate about 1/3 of the package.

We stopped at the grocery store for some more substantial food. I was freezing cold, so a hot bowl of jambalaya soup to warm me up was just what I wanted!

And a roll for dipping. I was expecting more from this guy–it was not very flavorful like I hoped it would be. It still did the trick though.

This marathon was a very low-key race with only about 200 participants. The results haven’t been posted, so I don’t even know how we did, but as soon as I find out, I’ll let you know.

Overall, it was a lot of fun, but it sure went by in a flash!

Snow City Cafe

What a fun but busy weekend. It flew by in a flash, and I can’t believe it’s Monday already. :(

Saturday morning, Craig and I headed to Snow City Cafe in downtown Anchorage for some breakfast. We love this cafe and have gone here a number of times before!

I love the door handles.

The cafe is open, bright, and a little hippy, but we love it!

Even though we’ve been here a number of times, I still have to study the menu to weigh all my options.

I love how they support local businesses and strive to be green.

I finally settled on an omlet, which isn’t like me, but I guess I was craving some protein that morning.

Über Omelet
Black Forest ham, red onions, green peppers, Roma tomatoes, mushrooms, spinach, cheddar, Swiss

I enjoyed my omelet. I didn’t love it, but it wasn’t horrible either. It seemed like I could have easily recreated this at home. Oh well. I should have went with the Stuffed French Toast : French Oven’s baguette, mandarin orange cream cheese,
toasted walnuts, syrup, raspberry butter.
(Now that’s a winner!)

Craig almost always gets the same dish. He’s finds something he likes and sticks with it. :)

Nuevo Huevos
Fried Taco Loco white corn tortilla, brown rice, black bean salsa, cheddar, ranchero sauce, two eggs any style, fresh guacamole, sour cream

He said it wasn’t as good as the other times we’ve come, but he didn’t have any trouble clearing his plate. ;)

After breakfast, we grabbed some coffee to take with us. A 12 oz. decaf skinny Kaladi Latte for me, and a 16 oz. Sludge Cup for him.

Our next stop: to do some cheering at the Cross Country Running Jamboree for the kids where I work at. We had fun cheering everyone on. I talked about how I’m probably going to be that parent that gets my kids up at 5:00 in the morning to do track workouts!
