Rhubarb Crisp

Where does my time go? There was actually little on my “to-do” list this afternoon, but I sure kept myself busy. :)

It is so nice to be able to have lunch with Craig every once in a while. I am going to miss it once I start teaching again, which is quickly approaching!

My eats for lunch:

Israeli Couscous with Beans

A sweet, juicy kiwi. Yes, you can eat the skin. If you can get past the fuzzy texture, it is honestly quite good. Plus, you save time by not having to peel it!

And a Skinny Cow Mint Ice Cream Sandwich. So minty and chocolatey! These are awesome, but I think the Skinny Cow Caramel Ice Cream Cones have my heart.

This afternoon I was busy in the kitchen making Craig’s favorite dessert. There is only a handful of sweet treats my husband likes, but his mouth waters for Rhubarb Crisp.

This recipe comes from my mom who made this all the time while I was growing up.

I started with fresh rhubarb from my in-law’s garden.

Rhubarb Crisp

Ingredients:

4 cups fresh rhubarb, diced

1/2 teaspoon salt

1 1/3 cups sugar

3/4 cup all-purpose flour

1 teaspoon cinnamon

1/3 cup butter

Directions:

1. Place rhubarb in ungreased baking dish, 10 in. x 6 in. x 1 1/2 in. Sprinkle with salt.

2. Measure sugar, flour, and cinnamon into bowl.

3. Add butter and mix thoroughly until mixture is crumbly.

4. Sprinkle evenly over rhubarb.

5. Bake at 350 degrees for 40-50 minutes or until topping is golden brown.

While baking away this afternoon, I snacked on some Dr. Kracker Krackers and medium cheddar cheese.

New Finds

Rain, rain, go away. . . . once again it was raining on my our run this morning. That’s right, Craig joined me for a run this morning. I did two miles on my own, and then he joined me for the last three. It is nice to have some company every once in a while–otherwise all my runs are solo.

During our run, I was day dreaming of hot pancakes right off the griddle! So as soon as I returned home, I got busy in the kitchen.

Greek Yogurt Pancakes, bacon from my parent’s farm, and fresh organic strawberries. That really hit the spot this morning. My mouth is still watering thinking about them!

Yesterday I went to Natural Pantry here in Anchorage. I don’t go to this grocery store often because it isn’t that close to where we live, but my friend was telling me about some food products she had gotten there that I had been wanting to try for a while.

Food Should Taste Good Chips

I was so excited to score these for $2.29 a piece! Usually they are at least $3. Plus, they had some flavors I haven’t had a chance to try yet: The Works and Blue Corn! They also had their Chocolate Chips–is that legal? As much as I want to try them, I just want to sample a couple, so I left them on the shelf. (The Lime chips are Craig’s favorite.)

Siggi’s Yogurt

I have seen many bloggers eat Siggi’s yogurt, but I did not think I would be able to find it anywhere in Anchorage. When my friend told me she eats Siggi’s and found it at Natural Pantry, I was estatic! I made a beeline for the dairy foods as soon as I got into the store to find this long-awaited treasure.

As soon as I got home, I sampled this guy to see what it was all about. This Icelandic yogurt was SO thick! I think it is thicker than Greek yogurt! Now I will admit, the first few bites were a little weird because I expected it to taste like yogurt. While it had the consistancy of Greek yogurt, it didn’t exactly taste like regular yogurt. And to be quite honest, I am not sure I can accuratly describe the taste of this yogurt. However, after the inital few bites, my spoon kept reaching for more.

Check out the nutrition facts! I don’t think you can get much better than:

- 0 grams of fat

- 65 mg of sodium

- 10 g of sugar

- 16 g of protein

What an awesome product, but I had to pay a pretty penny for it–$3.19. (yikes!)

Doctor Kracker: The Klassic 3 Seed Kracker ($3.09)

Once again, this was a product I’ve seen other bloggers eat and rave about–and another product my friend had told me she’d gotten at Natural Pantry.

I sampled these yesterday–and like the Siggi’s yogurt–I wasn’t quite sure what to think at first. They definitely have a good crunch to them and a pleasant flavor, but I wasn’t loving them. I am wondering though if I just picked a bad flavor. I am willing to give them a second try though, and I could definitely see them growing on me.

My final new product were some more crackers I’ve heard good reviews about. They weren’t quite as expensive–$2.79. I haven’t tried them yet, but when I do, I’ll be sure to review them for you.
