Salmon Chowder

With all of the rain and temperatures in the 50s lately, tonight’s dinner seemed like a soup-kind-of-night. Specifically . . . .Salmon Chowder. . . and it definitely hit the spot!!

This Salmon Chowder was out-of-this-world! Even Craig, who doesn’t like salmon chowder, said it was the best he’s ever had. :)

My friend, Jen, was kind enough to share this with me!

Salmon Chowder

8 servings

Ingredients:

3 tablespoons butter (can also use olive oil)

3/4 cup chopped onion

1/2 cup chopped celery

1 teaspoon garlic powder (I used a garlic clove, pressed.)

2 cups diced potatoes

2 carrots, diced

2 cups chicken or vegetable broth

1 teaspoon salt

1 teaspoon ground pepper

1 teaspoon dried dill weed

1 (16 ounce) can salmon, skin and bones removed

1 (12 ounce) can evaporated milk (fat-free or 2% can be used)

1 (15 ounce) cream-style corn (I used frozen corn.)

3/4 cup shredded American cheese (I did not use.)

Directions:

1. Melt butter in a large pot over medium heat.

2. Saute onion, celery, and garlic powder until onions are tender.

3. Stir  in potatoes, carrots, broth, salt, pepper, and dill.

4. Bring to a boil and reduce heat.

5. Cover and simmer 20 minutes.

6. Stir in salmon, evaporated milk, corn, and cheese.

7. Cook on low heat until heated through and cheese melts.

This is going to be a recipe I definitely make again! Everything about this recipe–taste, texture, and combination of flavors–were amazing!!

I also had a piece of sourdough bread with my soup. This sourdough bread is a winner!

My last Skinny Cow ice cream cone. :( I shared this one with Craig. :)

Now back to watching The Bachelorette!

Running in the Rain

No amount of rain was going to keep me from completing my run today! I really don’t mind running in the rain; I will take rain over snow ANY day!!

And thanks to the hat I wore today, it made running in the rain quite bearable.

Before taking off on my run, I had a yogurt bowl.

My yogurt bowl contained:

- plain low-fat yogurt

- fresh strawberries

- chia seeds

- Kashi Heart-to-Heart Cinnamon Oat Cereal

- shredded coconut

- peanut butter

- agave nectar

For today’s workout, I ran to a high school track we live near to do a ladder workout.

Today’s ladder workout: 400, 800, 1200, 800, 400 (all in meters)

- 2 mile warm-up with some plyometrics: 16:33

- 400: 1:38

- 800: 3:25

- 1200: 5:15

- 800: 3:25

- 400: 1:34

- 3 mile cool-down: 24:00

Total time: 56:00

Overall, it was a really good workout. I enjoy changing up my workout and going to the track for some speed work. I know some people really dislike it. But I like it!

Breakfast #2/Lunch

Green Monster

- soy milk

- 1/2 frozen banana

- soy protein powder

- shredded coconut

- chia seeds

- vanilla extract (this was the key ingredient)

- lots of spinach

I also had half of a multi-grain bagel with Laughing Cow Cheese and some strawberries. (I had more strawberries while preparing everything.)

Then I was craving something salty, so I had approximately one serving of Goldfish. And within a relatively short period of time, my stomach was not satisfied, so I made a peanut butter and jelly sandwich that was consumed before my camera remembered to take a picture. :P

Now I just need to work at combing through this mess. My pin-straight hair always gets tangled when I run in the rain.
