Date Night at Suite 100

Craig and I declared it a date night tonight. We don’t go out-to-eat too often (maybe once a month), and since it had been a while since we last went out, it was time to change that.

We chose Suite 100 in Anchorage because of its finer dining atmosphere but not too overly pricey.

Inside the setting is nice and open with tables and booths. Off to the left-hand side you can see the cooks making all the food. It would be fun to watch them, but that might be a little awkward.

Our meal got started with some warm, fresh sourdough and multigrain bread. Both kinds were chewy on the outside and soft in the middle. . . so good!!

We chose the Coco Prawns for an appetizer. We’ve actually had these before and thoroughly enjoyed them the first time, so why not get them again?

Each of the prawns were coated in coconut which provided a sweet but still savory taste. They were served with a tamarind-guava dipping sauce. (I honestly don’t know what that is; I just got it off the menu.) We thought it had some sort of applesauce base to it.

I had the Suite 100 Panzanella Salad, which contained grilled garlic croutons, mixed greens, Sweet 100 tomatoes, fresh mozzarella, roasted peppers, and toasted pine nuts tossed with fresh basil.

This salad could have easily come from the main entree menu for its size. This was not a dinky little side salad; it was big enough for a meal.

I did like this salad, but there was WAY too much dressing on it. (I’m pretty sure that is even evident through the picture.) Every leaf of lettuce was doused in dressing, so I didn’t eat very much of it. After seeing the salad, I remembered the last time we came, our salads were heavy laden with dressing as well, so next time we will be sure to ask for the dressing on the side.

Craig ordered the Island Flank Steak which was dynamite! These tender cuts of meat were “marinated and pounded to tenderness and served pinwheel-style with pineapple soy-ginger glaze alongside fresh vegetables and rice pilaf.”  These cuts of beef melted in your mouth and carried a flavorful punch to them that we both enjoyed.

The amount of rice was perfect, and I got to eat all of the veggies because Craig isn’t a fan of cooked carrots or green beans. I was okay with that!!

It is fun to examine the presentation of the food.

After all of that, our tummies were full and it was time to head home to do some packing for our canoe trip tomorrow. Stay tuned for a recap.

Early Morning Runners

It was so nice to see the sun shining this morning!! :D The sunshine brightens my day so much. I hope it sticks around today!!

This morning started a little earlier with me giving my husband a swift kick in the hiney to get out of bed for our morning run. Hey, don’t blame me, it was his idea!!

The alarm went off a little after 6:00 a.m. and after only one snooze cycle, (which is not usually the case) we were putting our running clothes on for a chilly (I could see Craig’s breath!!) glorious morning run. We ran three miles in 30 minutes. It was fun to run with Craig–and be the one who gets to do all the talking. It doesn’t happen very often, so I have to enjoy it while I can. (Both the run and the talking.) ;) I was SO proud of him though!!

After that I finished my run with another 3 miles in 25:30.

It was now time to warm up with a bowl of hot oatmeal. See the sunshine?!?!

MMMM. . . . I love this stuff!! I think I could eat it every morning!!

Combined and cooked together:

- 1/4 cup old fashioned oats

- 1/4 cup milk

- 1/4 cup water

- chia seeds

- 1/2 sliced banana

On top:

- coconut

- fresh blueberries

- peanut butter

- plain Greek yogurt

If you have not tried Greek yogurt on your oatmeal, you should!! I gives the oatmeal a wonderful smooth, creamy texture.

I also snagged one of my Thick Chewy Granola Bars I made yesterday. They were awesome!! Full of flavor, moist, and chewy!! Everything a granola bar should be.

I am a little sad though because they did not stay together in a “bar” form very well. I think it will end up being granola.

For a mid-morning snack I had a Chobani Greek yogurt cup. This is the best Greek yogurt I’ve had so far!! The fruit on the bottom tastes real–not fake–and there is extra room in the cup to add a handful of toppings. . . genius!!

I also had half of this Pink Lady apple. (Yes, I eat a lot!! Especially in the mornings.)
